Preheat oven to 450° and place parchment paper on a baking sheet and generously sprayed with non stick spray or oil a baking sheet with vegetable oil.
Using a stand mixer with the dough hook, add flour, sugar, salt and yeast, stir and then add warm water.
Using a spatula, stir prior to turning on the mixer, then turn mixer to medium speed and knead for about 5 minutes.
Place some oil onto a paper towel and oil the inside of a medium bowl.
Sprinkle dough with some flour and place in a bowl. Cover with plastic wrap and let sit for 30 minutes until the dough has doubled in size.
Lightly oil a clean dry surface and turn dough out. Cut the dough into 8 pieces.
Take one piece at a time and roll between your hands. Make each piece about 15 inches long.
Cut each long piece into desired bite size pieces.
Heat water and baking soda to a boil of medium heat then turn off and let cool for a couple minutes.
Place a handful of pretzel bites into the baking soda bath for 30 seconds on each side.
Remove from the water and place on the prepared baking sheet.
Once all the pretzels have been removed from the baking soda water and placed on prepared baking sheet, sprinkle pretzel bites with sea salt.
Place pretzel bites in the oven and bake for 8-12 minutes or until pretzels are golden brown, then remove from oven and brush with melted butter.
