Easy Pumpkin Spice Bread Pudding

For the Bread Pudding

  • 16 ounce Challah bread, chopped into 1-1½ inch pieces
  • 32 ounces Pumpkin Spice Coffee Creamer
  • 5 eggs
  • 1 teaspoon cinnamon

For the Glaze

  • cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoon milk


  • Preheat oven to 350° and spray a 13x9 baking dish with nonstick cooking spray.

For the Bread Pudding

  • In a large bowl, whisk eggs, cinnamon and creamer together.
  • Add bread pieces to egg mixture. Let sit 10 minutes.
  • Pour bread into prepared baking dish.
  • Cover with foil and bake for 55-60 minutes.
  • Remove foil and continue to bake for 10 additional minutes.
  • Carefully remove from oven and top with glaze. Serve warm.

For the Glaze

  • In a small bowl, whisk powdered sugar, vanilla, and milk together. Add more milk if needed.
