Cook rice according to package directions. Set aside.
Melt garlic butter in large skillet.
Add onions and garlic. Sauté for 1-2 minutes.
Add carrots, peas, and corn. Cook for another 2-3 minutes or until carrots start to get tender.
Push veggies to the side of the skillet and add 4 eggs.
Using a whisk or fork, scramble the eggs in the skillet until cooked, then mix scrambled eggs with the veggies.
Next, add cooked rice, salt, pepper, soy sauce, and sesame oil.
Stir to combine and let cook for 2-3 minutes.
Remove from heat and enjoy.
