Easy Fried Rice

  • Cook rice according to package directions. Set aside.
  • Melt garlic butter in large skillet.
  • Add onions and garlic. Sauté for 1-2 minutes.
  • Add carrots, peas, and corn. Cook for another 2-3 minutes or until carrots start to get tender.
  • Push veggies to the side of the skillet and add 4 eggs.
  • Using a whisk or fork, scramble the eggs in the skillet until cooked, then mix scrambled eggs with the veggies.
  • Next, add cooked rice, salt, pepper, soy sauce, and sesame oil.
  • Stir to combine and let cook for 2-3 minutes.
  • Remove from heat and enjoy.
