Easy Apple Cheesecake Bites
These super easy and delicious mini apple cheesecakes are the perfect fall dessert recipe. A creamy cheesecake layer is baked on top of a graham cracker crust and then topped with apple pie filling. Easy, delicious and the family will love them.

For The Crust
- 1½ cups graham crackers crushed
- 2½ tablespoons sugar
- ⅓ cup butter, melted
Preheat oven to 350° and line a muffin pan with liners and lightly spray with nonstick cooking spray. Set aside.
In a medium bowl, add graham crackers, sugar, and butter and mix until combined.
Press the crust into the bottom of the muffin liners.
In a medium bowl, beat cream cheese until smooth.
Add eggs, sugar, and vanilla. Beat until combined then spoon cream cheese mixture on top of crust.
Bake for 35-45 minutes or until cheesecake is set but a little jiggly in the center.
Remove from oven. Let cool completely.
Add chopped apple pie filling on top of cheesecakes.
