Easy Ground Beef Pasta

Ingredients

  • pounds lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 jalapenos, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 tablespoons taco seasoning or 1 taco packet
  • 10 ounce can Rotel
  • 2 cups beef broth
  • 2 cups elbow macaroni noodles (8 ounces)
  • 3 cups sharp cheddar cheese, shredded, divided
  • 4 ounces cream cheese, cubed
  • ½ cup sour cream

Instructions

  • In a large skillet or Dutch oven, add meat, onions, jalapeno, salt, and pepper.
  • Cook over medium heat until ground beef is no longer pink and onions and jalapenos are tender.
  • Drain and return to pan.
  • Sprinkle meat mixture with taco seasoning. Stir.
  • Pour beef broth and Rotel into meat mixture.
  • Bring to a boil, then add pasta. Stir and cook for 15 minutes.
  • Add 2 cups of cheese into pan. Stir until melted.
  • Next, add cream cheese and sour cream. Stir until melted.
  • Add to serving bowls and top with remaining cheese.
