Cinnamon Toast Crunch Bread Pudding

Ingredients

For The Bread Pudding

  • 24 ounce cinnamon toast crunch coffee creamer
  • 16 ounce Challah bread
  • 5 eggs
  • 1 teaspoon cinnamon

Buttermilk glaze

Instructions

  • Preheat oven to 350° and spray a 9x13 or 7x11 baking dish with non-stick cooking spray.

For The Bread Pudding

  • In a large bowl, whisk creamer, eggs, and cinnamon together.
  • Add bread to mixture, stir to coat.
  • Place bread into prepared baking dish.
  • Cover with foil and bake for 55-60 minutes. Remove foil and bake an additional 15 minutes.
  • Remove from oven and pour buttermilk glaze over the top.
  • Sprinkle crushed cereal on top of glaze and serve warm. (Optional)

For the Buttermilk Glaze

  • In a small saucepan, combine sugar, baking soda, buttermilk,, butter, and corn syrup.
  • Bring to a boil and cook for 5 minutes, stirring often.
  • Remove from heat.
  • Add vanilla and stir until combined.
  • Pour over bread pudding immediately.
