Preheat the oven to 375° and lightly spray a 9x13 baking dish with non-stick cooking spray. Set aside.
In a large bowl, add soup, onions, sour cream and seasonings, stir together until combined.
Add hash browns and shredded cheese, stir.
Pour mixture into the prepared baking dish and spread out evenly.
Add crushed crackers to a medium bowl and stir in melted butter until combined.
Sprinkle cracker mixture evenly over the potatoes and bake uncovered for 45-50 minutes or until the topping starts to brown.
Carefully remove from the oven and serve with your favorite dish.
