How to Make Hash Brown Breakfast Cups
Step 1: Prep
Preheat oven to 350 degrees. In a large bowl, combine hash browns, Colby jack cheese, olive oil, salt, and pepper. Stir until combined. Spray a muffin pan with non-stick cooking spray.
Step 2: Making the Hashbrown Crust
Spray a muffin pan with non-stick cooking spray. Use a large cookie scoop to measure out hash brown mixture and add to the muffin pan. Use the backside of the cookie scoop to push hash browns down and up the side of the muffin pan to create a nest shape. Spray hash browns with cooking spray and bake for 15 minutes.
Step 3: Cooking the Sausage
While the hash browns are baking, crumble breakfast sausage in a medium pan and cook until browned.
Step 4: Assembling the Hash Brown Cups
Remove hash browns from oven. Place a tablespoon of sausage crumbles into each hash brown cup. Top each cup with an egg. Sprinkle Pepper Jack cheese on top of each egg. - 20 oz hash browns
- 12 eggs
- 3 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1 cup Colby jack cheese
